As a beekeeper for 41 years I would like to offer a few comments about your information on the differences between Raw and Pasteurized Honey. Honey is relatively acidic ~3.5 ph, not “alkaline forming” as you state. Most of my customers and I prefer raw honey over pasteurized. However, I believe the drawbacks of pasteurized are not as extensive or sever as you have reported on your website. If warmed properly, only a slight change in the taste and color of the honey is noticeable, even to a honey connoisseur… Many may appreciate your vigor and what appears to be on the verge of medical claims about Raw honey, but I and many have learned to be very cautious in making such claims… I think it would be fantastic if there were to be scientific evidence that supports the huge benefits you report in eating Raw honey… That said, there has been some advancement with using certain honeys in wound care. Yes, I believe HONEY (raw or pasteurized) offers some nutritive benefits over refined sugar. I also believe that some consumers of honey believe they have found relief from allergies or perhaps other ailments. I guess I would like to see some restraint in the way you have promoted honey in general and especially Raw, at the extreme detriment to Pasteurized… Honey is good…
